It's totally possible since people have written software for all three major computer operating systems to read the accelerometer data from the Wiimote, but would this guy really have had the time to make the hardware necessary to get that connected to his RC car remote?
Now, if there is already a car out there that is meant to be compatible with a PC or something, so it can be controlled by software, then I can definitely see this being true. But I've never heard of such things (not that I follow that particular hobby). There are just a few moments in the little demonstration that the lag between wiimote tilt and the motion of the car that is different from other moments.
